The Most Awesome Fish Tacos You Can Make At Home


(It's really Sunday, but due to a migraine and general laziness, I'm back-dating to Friday.)

Friday night, one of my childhood best friend's, Marcy, came over so we could celebrate her passing the elementary education certification test as well as watch DVDs of home videos of the early 90s and us making music videos. Amazing. Anyway, since it is the first Friday of the new year, I wanted to keep things remotely healthy. So, I knew this Baja Fish Taco recipe was perfect. I made these once before and my friends and I just LOVED them. I followed the directions but used soft flour tortillas instead. This recipe makes a ton of sauce and is so good, you're going to want the leftovers, so I suggest doubling the fish. Trust me.

I served this along with my favorite chip, Tostitos Scoops, fresh pico from the store, and the best guac you don't have to make: Wholly Guacamole.

Finally, this Knorr's Mexican Rice rounded out the meal which came together in less than 20 minutes.

I normally don't care much about rice but I ate the hell outta this. You will love this meal!
