Eating For One Just Got Awesome(er?)

There are many nights that I eat at home and am too lazy to cook something fancy, so I end up either eating like a 4-year-old (i.e. my lunch today consisting of an apple and a Jello Pudding cup) in 28-year-old portions OR I end up making enough food for 4 (i.e. grilling up a pound of chicken Monday night) and realizing 4 days later that I only ate it once.

SO! I'm excited to delve into this book, Alone in the Kitchen With an Eggplant: Confessions of Cooking for One and Dining Alone, which features 26 writers and their "secret meals they make for themselves when they are alone."

My Lean Pockets will be sad if I stray too far...maybe I'll start reading this AS I am eating a Lean Pocket, or a Jello, or a bag of Craisins. Then we can just all ease into higher-brow dinners.
